On the farm we have a small plot of Garganega which makes us one barrel. The barrel of Garganega adds to that Paradise splash! You'll need some to drink now and a few to put away for later. 2018 High Paradise Savagnin, Chardonnay & Garganega 13%alc A third season for High Paradise which consists of a mixture of early picked fruit, fully ripened fruit and some whole bunch maceration. This year being the first year that a portion of all three grapes were co-fermented together bringing only brighter and more bountiful luminosity to its core. We have five small plots on our farm of Sauvignon Blanc. All facing different aspects which create different ripening stages and flavours. A sincere wine that possesses a floral flick as it guides you along its journey. We see it as an enjoyable table wine or good company for those who live close to parks or beaches. The crown seal will help when no one has a cork opener. This parcel sits happily out the front of our winery, its the heart of our property. We walk through the rows everyday from our home to our cellar. During the ripening period the vines are bathed by the sparkling morning sun and shaded in the afternoon. A blend of ferments, some carbonic maceration and some de-stemmed. A fortnight macerated on skins which gives the wine a savoury and grippy tone. Some whole bunches brings in some bright and delicate fruit. 2018 Blush Pinot Gris 12.9 %alc Pinot Gris macerated on skins for a fortnight. This wine welcomes the sunshine, blossoms and gentle warmth of Spring. It has texture, a pleasant fruitfulness from the 2018 vintage and a bright blush colour to carry the energy of this wine. This wine has a new feeling thanks to a richer body and texture with an uplifting umami nature to it. This wine was led by its fermentation. Whole bunch semi carbonic ( no gasses or plastic used). Untouched by hands or pigeage for 15 days while using only scent to follow its journey. Day 16 pressed gently and transferred manually into aged french oak. A wine of the season and a wine the keeps our fascination with fermentation alive. https://images.squarespace-cdn.com/content/v1/5dfaac7e6103f92468aaae75/1576734430512-MIC7GKYN43PENJHZBSFQ/WN+Sparkling.jpg Wine - Wild Nature Sparkling 2017 Wild Nature Sparkling Pinot Gris 10.5%alc Wild Nature is Pinot Gris coming from vines that are left to grow free with nature and remain un-manipulated by man (or woman). The vines have not been pruned since 2015 and grow as they wish. This Sparkling is an elegant wine with beautiful complexity. The ferment was slow, complex, healthy and as an end result created two beautiful wines (the second Wild Nature, ‘Still’ is happy in the cellar gaining another couple of months or years to add to its complexity). This Sparkling ferment went dormant in winter and come last spring a moment arose where we felt it was happy to be bottled and finish fermenting in bottle. The result is a traditional farm style pet nat requiring no disgorgement because of the 7 months settling in barrel. It has had a year in bottle and is drinking vibrant and elegant. Pinot Gris straight pressed - crushed by foot and then pressed by basket. The remaining Savagnin finding its way into High Paradise and in certain years when it feels right - Geoponika. For this cuvée we choose the most delicious sun kissed perfect bunches that have been left hanging for just that little bit longer. Squashed by foot, direct pressed and then fermented in barrel. After over a year in bottle this wine has transformed into one of our most delicious wines we think. The mouth quenching acidity that the grape is so well known for has become moreish and complements the broad structure of this wine. A wine to open and enjoy over an extended time and or meal. 2018 Savagnin Pure Savagnin 13.9% alc This is our pure expression of Savagnin grown at 600meters altitude, dry farmed and made with zero additions. Like all our wines this is 100% grapes. The grape at its ripe, glorious best with layers of flavour and that tingly jolt of acid that dances across the tastebuds. Crushed by feet and then basket pressed. This wine was bottled a few weeks after picking then rested on full lees for 15 months. Hand disgorged in the winter then followed with a further 9 months resting till now… The first and last? The rows vanish down the hillside almost vertically thus giving us very unique ripening. The top being more exposed and the bottom sheltered and vigorous. This cider is a thirst quenching delight. The fruit is a mixture of certified organic apples from the Shultz family - friends and neighbours. Pears from our friends down the road who have a heavenly 80 year old pear orchard of mixed old varieties. The rest of this fruitful cider blend comes from the wild apple and quince trees that we drive past year round. They grow then fall on the ground for the birds to eat. Not this year…. Apples, pears and quince pulped then pressed through Spring and Summer meadow hay cut from our farm. The barrels have been topped up with grapes skins, and wild sloe plums. A fruity combination and a refreshing drink when seeking something lower in alcohol and higher in life.
