2020 Geoponika - Savagnin & Chardonnay 11.7%alc
Made in the years when there is a true delicacy to the season.
Chardonnay and Savagnin components come from the most electric/mineral/expressive sections of their vineyards. The grapes are harvested then taken to the cellar and thoroughly squished by foot. This, once left for a night and day is pressed slowly to ferment in one or two favourite old puncheons. A seriously tight yet broad and open wine evolves with layer upon layer….two more years in bottle harmonises and enriches and sets it soaring. Allow to open and evolve to welcome the complexity of this wine.
Red clay over schist with a predominance of iron stone quartz sings to this wine.
2021 Marmaka - Chardonnay 11.3%alc
Our first single barrel of Chardonnay. It has taken some years for this vineyard to find a stride that motivates us to create a single-varietal wine. With the finest work from chickens, herbal preparations, good pruning and vine work, this block has begun to tell a new story. Also home to the Chardonnay component of Geoponika and on the alternative years, High Paradise.
The 30+ year old vines cascade down a steep slope and inject their roots into red clay over old weathered schist with a predominance of iron stone quartz. East facing and sheltered by Native and Pine forest, allowing only mid day light for a very fine structure.
Our direct press is stomped by feet and left to macerate over night, pressed the following morning, fermented in barrel and left to settle in bottle.
2023 High Paradise - Savagnin & Chardonnay 11% alc
The first release since the 2019 vintage for High Paradise. This exciting and powerful 2023 expression consists of a mixture of early picked fruit, fully ripened fruit and some whole bunch maceration. 2023 High Paradise is a pure expression of Savagnin and Chardonnay from 30+ year old vines. Some Savagnin is crushed by foot along with Chardonnay and then direct pressed and fermented in a favourite old puncheon, whist the other half of the Savagnin ripens for a further week or two. This is then whole bunch macerated, bringing mineral depth, aroma and savouriness to this cuvee.
Red clay over slate/siltstone with a predominance of iron stone quartz brings a bright and bountiful luminosity to its core. Drinking beautifully now, this wine is also at the very beginning of its elegance and we see that there is much longevity to this High Paradise.
